spelt, almond and quinoa breaky cookies


I've recently been inspired by a lovely lady, who owns a lovely store.
Catie is an ex-breakfast chef, a naturopath and wholefood enthusiast.
 The Staple Store is her baby, and boy is it exciting.

This is one of recipes I tried this weekend. Here is the recipe:

  • 3/4 cup organic spelt flour
  • 1 1/2 cup chemical free almond meal
  • 1 1/2 cup of chopped dates
  • 1 tsp cinnamon
  • 4 tbsp organic quinoa flakes
  • 8 tbsp organic rapadura raw sugar
  • 1/2 tsp salt
  • 1 tbsp chia seeds
  • 2 tbsp organic flax seeds
  • 3/4 tbs rice bran oil
  • 1/4 cup water
  • 2 eggs
  • 1 lemon rind and juice
    1. combine all ingredients
    2. let rest for 10 mis
    3. roll into cookie shapes (about 1-2 tbsp each)
    4. bake in a 180C (pre heated) for 12-15 mins (let rest for 15 mins on the tray before removing)

    new shoes, new earrings






    I got these fabbo Prada-rip-off earrings last night from Lovisa -
    love! These are my new shoes (it's the end of financial year sales)
    I got for $50 - but I literally took them out of the box (which was
    hidden in my car from my other half) and put them on my feet
    and went to work - without weather-proofing them. Oops.
    I hope they dry out okay. :/ How good is the heel?

    Left my heels at home so had to schlep around in my
    cat/dog Campers, also known as my "driving shoes" all day.

    it's cold outside












    We're in the middle of winter in Melbourne and very chilly.
    I've always been very conscious of layering as I'm quite curvy,
    and with too many layers I can end up looking plain bulky.

    These cardys are on special for $20 currently at Cotton On and
    I liked them so much, I bought four. I've been looking for '60s
    knitted cardigans, but these will suffice for now.

    I'm currently obsessed with eating wholefoods.
    I eat pretty cleanly, anyway - here are my sins:

    - single packet porridge for breakfast
    - muesli bar for morning snack
    - cuppa soup for afternoon snack
    - instant hot chocolate after my dinner

    Apart from that, the rest of my diet is fruits, veggies, whole
    grains, nuts, beans etc. So I'm going to try to right my wrongs.

    Firstly, I'm going to swap the morning muesli bar for some
    homemade delights. I got this recipe from the Catie's blog, which
    is where my inspiration has sprung from. Be sure to check it out,
    if this is your kind of thing. There are loads of recipes to try.


    FIG AND HAZELNUT BREAKY BARS


    all you need is

    180g of organic oats
    90g of hazelnuts raw
    7 big juice dried organic figs
    80g of rapadura raw sugar
    1 tsp of cinnamon
    1/2 tsp of celtic sea salt

    to be added
    2 big eggs and 1/2 tbs of olive oil
    Put all ingredients (except the figs) into a food processor until finely ground.
    Chop the figs thinly and throw into the dry mix.
    Add the eggs and the olive oil and combine.
    Take 1-2 tbsp of the dough an roll into a sausage, then flatten with your palm.
    This dough will not spread or rise in the oven so make the
    dough into the size and shape you want your bars to take on.

    Cook in a preheated 180C oven for 10-12 mins,
    leave to cool for 10 mins before tucking in.
