my favourite christmas recipe


These are heaven. Above are the ones I made last night.

Cranberry & Pistachio Shortbread

250gms softened butter
1/2 cup caster sugar
2 cups plain flour
1/4 cup rice flour
1/3 cup pistachio kernals, chopped
1/3 cup craisins, chopped

Preheat oven to 160 C
Cream butter and sugar until light and creamy
Sift flours and add to the creamed mixture
Mix well, stir in the pistachios and craisins
Turn dough onto a lightly floured surface and knead gently to form a ball
Cut dough in half and roll into smooth log shape
Wrap in baking paper and place in the fridge for 30 minutes
Using a sharp knife, cut the log into 1/2 cms slices
Place onto a baking tray and bake for 15-20 minutes until lightly golden
Cool on trays
